What is stored, and why
Your cart and your chosen currency live in local storage, which is what lets checkout keep the exact package and the exact target link you picked while you move between pages. The third entry records that you answered the banner, so it stops asking on every page.
Google Analytics, and what your answer changes
Google Analytics runs on every page to show us which pages are read and where orders come from. Your banner answer decides how: with Accept all it may set its own cookies (the _ga family) and recognise you on a later visit; with Essential only it sends cookieless pings, so nothing identifies your browser across visits.
When you pay
Paying happens on the payment provider's page, card or crypto, which is not part of this site and sets whatever its own operator sets. Nothing about that payment is written back into your browser here beyond the order you already have.
Changing your answer
Clearing this site's data in your browser removes the stored answer, and the banner asks again on the next visit. It also empties the saved cart and resets the currency to the default.
What we would have to tell you
If an advertising pixel or any further third-party tag were ever added, it would be named here before it ran. This page lists everything that runs.
